This recipe is from Nourishing Traditions, by Sally Fallon. To view or order her book.
1 Whole free-range chicken or 2-3 pounds of chicken parts, such as necks, backs, breastbones and wings.
Gizzards from one chicken (optional)
Feet from the chicken (optional)
4 quarts cold filtered water
2 tbsp Vinegar- (I used coconut vinegar!)
1 large onion chopped
2 carrots peeled and chopped
3 celery sticks
1 bunch of parsley
I made this, this past week and have been drinking it a few times a day. I was delighted at how wonderful it made my house smell, and I also added some into Landon's formula. I experienced a great deal of appetite suppression, which I thought was an awesome and unexpected bonus.
So check out what Sally says it does:
Natural (free-range) chicken has ingredients that feed, repair and, calm the mucous lining in the small intestine. This lining is the beginning or end of the nervous system. This lining gets pulled away from the wall of the intestine through too many laxatives, food additives, and other irritants. The broth.. heals the nerves and improves digestion, reduces allergies, relaxes and gives strength.
There are many more benefits, I recommend reading her book to get more info. In the meantime here is how you cook it.
Get your chicken. if you don't have a good source, here is where I order mine in a pinch. They have great customer service. Good Quality Meats Shipped to Your Door
Here is what you:
Put the chicken and all ingredients in a pot of cool water, and let sit for 30 min. Then bring to a boil, and turn down and simmer. (see above video for what the water should look like as it simmers)
set your clock for 24 hours. Keep an eye on the water level.
10 minutes before you are done, add parsley. It imparts additional mineral ions to the broth.
Cool, strain, and drink.
I did not have any chicken gizzards or feet to add into mine. However I am going to brave that part of the recipe and add those in next time. Will keep you posted.
